Cette unité de formation vise à permettre à l’étudiant, dans le respect des règles déontologiques, d’acquérir des compétences techniques et pratiques en salle et plus particulièrement, le service des fromages, des desserts et des alcools, les techniques de flambage et de découpe ainsi que quelques accords mets – vins.
